Tesshu Mizu Honyaki Wa Gyuto 240mm white II steel blades w/ Mt. Fuji Hammon made by Mr. Shiraki, Kenichi
The top one is Mt. Fuji Hammon version
The bottom one is normal wavy hammon version
They have still laminated plastic sealer that need to remove by lacquer thinner.
I should take some pictures for better shots, but I do not want to give scratches on the mirror finish blade, so I have to save the sealer until install the handle. After removed the sealer, it should be much better looking.
Ikkanshi Tadatsuna chef knife has great thin blade, and it is great to slice ingredient with thin blade, but this one has thicker version of the blade. It is great to make longer blade fillet knife.
I have got this huge Aoto ore with the other Aoto, and it is like pork ham size, and it should be 20lbs. or over.
I guess I have to cut in three pieces, and they will be two small size Aoto and one nice size Aoto, but it looks very hard Aoto.

They are the same blade, and I sharpened it by #220, #500, #1000, #2000, #6000, and Ohira suita, and polished it by ohira uchigumori at the end.
